Where does this come from?

Anchos are mild dried poblano chiles, imparting a little zip and a delicious flavor. When fresh, they are sold as "pasilla", and after drying are called anchos.

Ancho adds a long, slow finish with a hint of warmth. Pair it with anything chocolate or nutty.
