Yes, it’s true. Colin and Lynsie Steele have put a lot under their belts in the last 4 years. Owners of Perfect Flavor Creamery, Virginia’s first real ice cream processor in 30 years, artisanal cheesemakers, parents to Nick, 14 and Kate, 11, and expectant parents to be with baby Steele #3 on the way and due in May 2010!
Family comes first for us. However, creating a healthy, happy family means prioritizing the things that work in our favor. This is why we strive to feed our family locally produced food that is turned into deliciously healthy meals for our family to enjoy. We believe in good, real food. We do not count calories (we don’t even have a scale in our house!), we do not use any ingredients that we cannot pronounce, we use recipes that are inspired by seasonal ingredients, and we say “NO!” to HFCS (high fructose corn syrup) and processed foods. If we can’t make it, we don’t eat it.
While our Creamery is on hold (for more info, see our “Local Food” and “Parenting” pages), we are throwing ourselves into blogging about every aspect of our lives as parents and home cooks. With many recipes updated each week, news about our adventures with our kids, farmer interviews and more, there is little that we will be hiding about ourselves as we begin to explore our lives as a family who cares for healthy, local, sustainable food and natural parenting.
We hope you enjoy taking a peak into our lives as much as we enjoy sharing our special moments.

Congratulations! Are you still teaching the cheese workshop(the one in Cville)?I read about it and it sounded wonderful-wanted to sign my daughter up for it, but now I cannot find the form anywhere, nor can I find it on the website. She is looking forward to it….

Hello Michelle! Thanks for your interest. Yes, indeed I am still teaching one more class (the one in feb that you’r referring to) and then will be taking a break until the Fall. I’m due in May and feel like that should be a nice amount of time to get used to life with baby! In the meantime, if you or your daughter have any questions about food, recipes, cheese, etc, please email me: lynsie@perfectflavor.com. As far as why you’re having trouble getting onto the ED site, try this website:www.opendoors1.org/albemarle/ClassCatalog.aspx . This should bring up the “classes” page. Look for the “Food” section. My class is “And the cheese stands alone…” I will say that I’ve heard the class in already full, but you can always get on the waiting list. Usually, if there’s a big waiting list, CATEC asks that I teach the class again. Thanks and good luck!
My sister and I are curious as to what brand of small pasteruizer you use to create your ice creams? We were lucky to stumble across your website this past summer in seeking out a unique gift for our brother, but were very sad to see the site closed. However, being a new mommy myself and owning a business, I can understand your alliance of “family first”. Anyway, my sister and I are privy to obtaining fresh raw milk from a dairy here in the outskirts of Evansville Indiana and wanted to try our hand in producing grade A ice creams and cheeses.
We thought you may be able to advise us of what you use to make this a reality for us.

Hey J. Lynne, I’m happy to share that info! We were using a 15 gallon (it actually holds 16.5 gallons) vat pasteurizer made by JayBee Precision in New Hampshire (although just after visiting the site it appears they might now be made in Ohio). It is 3A approved, completely stainless steel, and is an amazing machine that was both designed and built by John Tomacek, who sadly passed away recently. I believe it is his brother or son who has now taken over production. John was a wonderful man who really did a lot to bring small dairy processing back into the hands of normal folks. In case you’re interested, we are actually selling our current model.
